I’m so excited to share this recipe. I’ve been using it myself for ages now and thought – why not share the recipe on the blog. It’s perfect in SO many ways! One of them being that is is so incredibly easy and quick to make. It only requires 6 ingredients as well.
(Warning: it’s a mini cake so it serves 2 people max.)
This recipe is for those evenings when you’re really craving something sweet but don’t have anything at home / or don’t want to reach for a chocolate bar. What can be better than a home baked, warm cake anyway? I don’t even know.
It’s a small size and I, personally, can easily eat it all by myself. However it’s also really good if you want to bake someone a surprise birthday cake too. Just make sure you double up the ingredients if you want a 2 tire/or a normal size cake for a special someone.
It is basically my go to sponge cake recipe for any life event!
- 1 egg
- 3 tablespoons of almond milk
- 4 tablespoons of cane/coconut sugar
- 3 tablespoons of coconut/olive oil
- 1/4 teaspoon of salt
- 3 tablespoons of raw cacao powder
- 4 tablespoons of whole-grain flour
- 1 teaspoon of baking powder
(all of the ingredients can be substututed for regular ingredients, such as: regular caster sugar or plain flour, butter and etc., I’m just using the healthier alternatives)
Preheat the oven to 178 degrees C.
Oil and flour the baking dish you will be using to ensure that the cake doesn’t stick.
Mix the egg, milk, sugar, salt and oil in a bowl. Add cocoa powder, flour & baking powder and mix well.
Transfer the mixture into the baking dish. Put into the oven and let bake for 23 minutes.
- 1/2 cup (85g) of chopped chocolate
- 30ml almond milk
- 28g (2 tbsp) of coconut oil /unsalted butter
- a tiny pinch of salt
In a small saucepan over medium-low heat, mix chopped chocolate, almond milk, coconut oil and salt. Stir until the chololate is melted and the mixture is completely smooth.
And that’s literally it! It only takes a few minutes to whip up and there you have a home baked, spongey & soft chocolate cake for everyone (or just you) to enjoy. It’s also great cause the recipe contains less processed ingredients and is full of healthy fats because of the coconul oil! The sugars are also natural which is much better for you!
